1 tsp honey
175 ml water
Â½ sachet yeast
275 g organic flour
2 tbsp (coarse) sea salt (such as Sel de GuÃ©rande)
1 tsp olive oil
Dissolve the honey in 50 ml cold water. Add the yeast and let stand for 10 minutes. Sprinkle 150 gram flour in a bowl and pour the Honey-yeast mixture. Add 125 ml lukewarm water and stir a minimum of 5 minutes solid. Not cover the dough and leave 30 minutes on room temperature. Add the salt, the rest of the flour and olive oil and mix everything into a coherent blend. Cover the bowl with plastic wrap and let rest: for the very best result 3 days in the refrigerator, else 2 hours at room temperature.
Remove the dough from the fridge, bestuif with what flower and make it a big ball of. Let rest 1 hour at room temperature. Bestuif the dough again with flour and press the Air there with the palm of the hand. Push the dough with fingertips to the outside. Turn the dough paste to and repeat this procedure a few times, until you see a large round slice of 30 cm diameter. Place the dough circle on a baking paper lined with baking tray, ready to be invested.
Preparation time: 15 minutes + 3 hour and 40 minutes rest (3 days rest is ideal)
